Late night Ramblings.

Whelp, it's 11:00 pm. I'm not even tired. Steve's snoring on the couch.
We've had a long and busy weekend.

I slept on our ride home for 2 hours...maybe that's why I'm not sleepy?

Thursday, after work we drove to Manila and spent time at the cabin with the Ford fam. We were able to go boating a ton! AND I'm getting better and better at water skiing. Which really makes me happy.
I'm counting down the days until we go to Lake Powell.
We also went to the lake and kayaked. Steve and I found a beaver dam.
Whit found a leach.-so gross.
Ate lots of great food.
Played games.
Relaxed and listened to the water on the lake.
Went on a walk with Steve.
My pasty white skin got a little color. :)
AND Bob put in a fire pit. SO fun!!! Every night we would sit around the camp fire and talk and roast marshmallows and make s'mores. Ellen came up with the brilliant idea of getting those graham cookies with fudge stripes and using those to make the s'mores instead of graham crackers and chocolate. I'm never going back to the old way again.
My mamasita let me borrow a book for the weekend. I seriously couldn't put it down.
It's called "Beyond the Veil" by Lee Nelson. The book is about actual accounts of Latter-day Saints and who have had experiences beyond the veil. The book was A-MAZING. Steve loved when I would read him a story or tell him about them too.
I just loved the fact that they were all true stories.

I'm pretty bummed my camera is STILL not working. Something is wrong with the shutter. I hope we can fix it soon. We just bought the camera 2 years ago. So, I don't have any fun pics to post.


I seriously love vacations. Even if it's for just a couple days. It makes me feel more alive. If that's the right word? I just feel more rejuvenated for another work week.

NOW, I'm getting sleepy. I'm going to bed.

Cupcake in a Jar.

I can't wait to make them for some friends and family!


Here's the recipe:

1. Find any box of you're favorite cake mix
2. Follow directions on the box and put the batter in a cupcake pan.
3. While the cupcakes are baking...
4. Make the frosting
Here is the C&H 5 minute buttercream recipe:
1 box powdered sugar
1 stick salted butter at room temp.
1/4 cup milk
1 tsp. vanilla
Combine and beat until creamy.

5. When the cupcakes have cooled, place one with the bottom side down, into each jar
6. Put another cupcake on top of the first layer of frosting, add even more frosting
7. Screw the lid on and make a cute top with ribbon and fabric.

Simple.

The possibilites are endless though, I've seen some where you add sprinkles and different colored frostings etc..

Wake up call.

I seriously am counting down the days!!! I can't wait!! Steve and I start our first Ballroom dance class on Tuesday night. I've been wanting to take one for such a long time now. It's the perfect time to take one too- Steve graduates (officially) next month and then he will be applying for pharmacy school. So, next year I don't think I'll be seeing my husband much. :( But, why think about that now. I'm SOOOO excited!!! I'm so out of shape though its unbelievable. Seriously.

Okay, here's a story.
Saturday morning, I went to the gym with one of my friends, Carrie. We decided it was time for both us to get back into shape. We both decided that we could motivate each other and help each other out. SO my brilliant idea was to go to a spinning class. How hard could it be? Ride a bike..piece of cake. BOY WAS I WRONG. We start cycling and I start breaking a sweat within minutes. 20 minutes pass and I'm starting to feel extremely sick. Almost like flu type sickness, where your stomach hurts and you feel you need to hurl. So, I get off my bike (my legs feel like rubber and my legs seriously want to keep going, and going..I don't know how to explain the feeling..) The room starts spinning, so by this time I really think I'm going to hurl, but I feel so sick I don't want to move. So I lay down sprawled out on the exercise floor with the fan blowing on me. I wanted to die. I so badly wanted to die right then and there. How could exercising make you feel so crappy??? I for sure over did it. As I'm laying there I'm trying to figure out why could I get this sick? I ate breakfast. Check. I've been only riding the bike for 20 minutes. check. Am I really out of shape this bad?? Then before I could think anymore..
The exercise instructor leans over me and asks me if I'm okay. I give her a thumbs up to let her know I'm not dead. I don't know how long I laid on that floor, but I laid there until the nausea went away and I got back on the bike. The instructor told me to take it slow, and then says "Do you have some health problem I don't know about? Or are you really, really out of shape?" Seriously lady. I'm so out of shape, that's why I'm here!!
Carrie and I and this old lady were the only ones in the class. Thank goodness. I mean usually I don't get embarrassed easily, but having to get off a bike and lay on the floor for being so sick, that is pretty embarrassing.
The class was over and Carrie and I were on our way home. As we were talking we just started laughing about how that old lady in the class wasn't even breaking a sweat. We're only in our 20's and we were dying. That was a huge wake up call me for. I really need to start exercising and eating better. I want to live a long and healthy life.
So that's my story.

Back to the original post-I'm taking ballroom dance class with my best friend!! How lucky am I? Steve told me that he will try it out with me because he knows how much it means to me. What a sweet heart.

Cake.


My cousin, Nat and I made our very first fondant cake last night! Nat found a fondant recipe and so we wanted to try it out. We made our fondant blue and yellow. So we covered the cake in blue and then made yellow fondant stars, and put the stars all over the cake.

I absolutely LOVE watching Ace of Cakes, and Cake Boss on TLC and every time I would see the cakes I wanted to learn how to make fondant so I can make one like them. (Obviously, I can't make one as good as them..BUT I think our first cake turned out awesome!)



I had a ton of fun just hanging out and making cake with Nat! I'm so happy that she moved closer.
Now I can't wait to make another one..I think I'm going to try and make one for Steve's graduation.

Happy 2nd Birthday Carson!!!

Carson is the ONLY nephew/grandson on the Anderson side (in the immediate fam) so he is super spoiled! It was like Christmas for him-Seriously!
We love everything about Carson! I still can't believe he's already two. He just keeps getting smarter, and cuter.

We sure love Carson and we are so grateful that he's in our family!

Great Grandma Ford

Jassamine Smedley Ford "Jassie" 1914 ~ 2010 BOUNTIFUL- Our beloved mother, grandmother, and great-grand mother, passed away July 6, 2010. Born May 13, 1914 to Angus and Margaretta Waddoups Smedley in Bountiful, Utah. She married Keith Haight Ford on August 21, 1935 in the Logan LDS Temple. They have lived in Bountiful their entire life. She was an active member of The Church of Jesus of Latter-day Saints residing in the Bountiful First Ward where she held many church positions; Relief Society Presidency, MIA Presidency, and Visiting Teacher for many years. She was a homemaker and enjoyed cooking, quilt making, knitting and needlepoint. She won many ribbons from the State Fair. She is survived by her son Richard( Sharon) Ford; daughter, Shirley (Jim) Allred and Margaret Ann Clark; nine grandchildren; and 30 great-grandchildren. She is preceded in death by her husband, Keith; parents, Angus and Margarette Smedley; and three brothers, Barr, Delbert and Sturton Smedley. The family wishes to thank all the nurses and staff associated with Alpine Hospice and Santa Assisted Living Center for the wonderful care they gave to our dear Mother. Funeral services will be held at 11:00 a.m., Saturday, July 10, 2010

Tuesday Night BBQ

Tuesday night we had a fun BBQ with our good friends The Bischoff's! We decided to all meet up at the new park by our house. We pulled out our portable grill, grilled some hamburgers & hotdogs while catching up on the latest. We had a lot of fun talking, eating, talking and playing Koob. We wanted to take some pics, but unfortunately our camera is not working. I still can't believe that the camera isn't working!! Everywhere I go I am taking pictures...

Anyway, I stole this cute family pic of them on Carrie's facebook account because I had to put a pic of them on our good ol' blog. (I didn't take this pic, wish i could take credit, but I didn't.)

Strawberry Banana Bread


Ingredients:
4 Ripe Bananas
2 cups Sliced Strawberries
4 Eggs
1/3 cup Applesauce
¾ cup Butter – melted
2 cups Sugar
2 t Vanilla
4 cups Flour
2 t Baking Soda
½ t Baking Powder
1 t Salt
2 cups Powdered Sugar
1/2 cup Lemon Juice

Directions:
Pre-heat oven to 300 degrees.In a large mixing bowl combine bananas and strawberry’s; smash together. Add eggs, applesauce, butter, sugar and vanilla; cream entire mixture together.Combine flour, baking soda, baking powder and salt; stir lightly.Add dry ingredients to banana mixture and stir.Pour batter into 3 well-greased loaf pans. Bake for 45-60 minutes, until a toothpick comes out clean.Allow finished strawberry banana loaves to cool in pans for 10 minutes. Remove from pans and place on a cooling rack; cool completely.While bread is cooling, combine powdered sugar and lemon juice in a mixing bowl and stir well to create a smooth glaze.When bread is completely cooled, place loaves on a wax paper lined baking sheet. Drizzle lemon glaze over each strawberry banana loaf. Allow glaze to set.Slice bread, arrange on a serving plate and ENJOY!

Sick baby Carson.



After our fun cabin get away we went to Primary Children's Hospital to see baby Carson. Carson was in the hospital for almost a week because he was sick with two viruses. The first virus is the Rotavirus and the second one is the Epstein Barr virus. The Epstein Barr Virus is pretty serious. It completely wiped out his white blood cells, which could lead to cancer. Which was really scary for my cute bro and Jade, but also for the whole family. It got everyone pretty worried. Thank goodness that the doctors caught the virus in time, and he's on his way to recovery. With a lot of prayers, Carson is getting better. We sure love you Carson!

HAPPY 4TH of JULY!!


This weekend was awesome. A well needed long vacation from work for both of us.

FRIDAY, we went to the Fourth of July parade with Ellen and Whit and then with our great friends, The Rappleyes. We had such a fun time! I seriously LOVE parades! I love that it brings in the spirit of the holiday! Steve and I are so grateful for the Rappleyes, they are such great friends to us.

After the parade we all went over to Bob and Ellen's and showed Deni the horses. Deni is SO smart. Seriously. She remembers everything that you tell her. Steve told her a couple weeks ago what the horses names were and what they ate. She remembered the names and that the horses ate carrots. She's such a doll!



SATURDAY, We met up with my family in Park City! We went to the Olympic Park. Which is awesome! I've never been there before. They have a fun ski museum and everyone was able to go on one of the rides. Steve and my dad along with all my other siblings went on the Zip line. NO THANK YOU. I'm seriously so scared of heights, there is no way I was going on that thing. So, me and my mom went on the Alpine slide. That was a lot of fun! I haven't done that slide in such a long time. Actually, last time was when Steve and I were on our honeymoon-Almost 4 years ago! We had a way fun time! I want to go there again soon.

Towards the evening, we met up with The Rappleye's and went to the firework show.Seriously LOVE fireworks, and we LOVE the Rappleye's. Can't ever get enough of these guys.


SUNDAY, We spent more time with The Rappleye's and went to Capri's baby blessing. The blessing was awesome, and we had great food afterwards.

MONDAY, Was heaven. No work for me. Wahoo! We woke up super early (53:0ish) and went boating with Steve's fam! So fun! Can't ever get enough of boating. We went boating all morning, and got home around 2. Then we met up with Todd and Larissa at Red Robin's for lunch. We haven't seen these two in forever! So it was really fun to catch up with them.
