Cupcake in a Jar.


I found this cute and yummy recipe at http://www.joyshope.com/

I can't wait to make them for some friends and family!


Here's the recipe:

1. Find any box of you're favorite cake mix
2. Follow directions on the box and put the batter in a cupcake pan.
3. While the cupcakes are baking...
4. Make the frosting
Here is the C&H 5 minute buttercream recipe:
1 box powdered sugar
1 stick salted butter at room temp.
1/4 cup milk
1 tsp. vanilla
Combine and beat until creamy.

5. When the cupcakes have cooled, place one with the bottom side down, into each jar
6. Put another cupcake on top of the first layer of frosting, add even more frosting
7. Screw the lid on and make a cute top with ribbon and fabric.

Simple.

The possibilites are endless though, I've seen some where you add sprinkles and different colored frostings etc..

Food for Thought Thursday

It's been awhile since I posted a RECIPE!!

Jamba Juice Banana Berry Smoothie



1/2 cup apple juice
3/4 cup strawberry nectar
1 cup frozen blueberries
1 banana
1 scoop of raspberry sherbet
1 scoop fat-free vanilla frozen yogurt
1 cup of ice


Jamba Juice always has the best smoothies! I haven't been able to make this one yet, but I'm really excited to try it this weekend! Enjoy!

Food for Thought Thursday

Chicken Tetrazzini


1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup
3/4 cup water
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley flakes
1/4 cup chopped red pepper or pimiento (optional)
1/2 packages (8 ounces) spaghetti, cooked and drained
1 can (12.5 ounces) Swanson® Premium White Chunk Chicken Breast in Water, drained
Directions:
Heat the soup, water, cheese, parsley, red pepper, if desired, spaghetti and chicken in a 2-quart saucepan over medium heat until the mixture is hot and bubbling, stirring occasionally.

Look at this! A cheap an easy meal...

Prep: 20 minutes
Cook: 5 minutes
Cost per recipe: $9.09
Makes: 4 servings

Oreo Kisses



1 package oreo cookies (divided… use cookie including the cream center)1 8oz. package cream cheese (softened)chocolate bark

1. Finely crush all but seven cookies in a food processor or place them in a ziploc bag and crush into a fine consistency.

2. Stir in softened cream cheese. Use the back of a large spoon to help mash the two together.

3. Roll the mixture into 1″ balls and place on wax paper covered cookie sheet.

4. Then, begin to form the shape of a kiss. Flattening the bottom and forming a point at the top. (Mine ended up about 1.5″ tall)

5. It helps to put the uncoated balls in the freezer for a few minutes to keep the mixture from starting to fall apart when you drop into the melted chocolate.6. Melt chocolate as directed on package and then dip “kisses” one at a time into chocolate, tap off extra and slide them off spoon onto wax paper covered cookie sheet to dry. 7. Once dry, refrigerate and enjoy! Oh yeah, just eat the extra seven cookies.

Decorate: 1. Handwrite your messages or create them on the computer. Cut out the strips (about 1/4″ tall and however wide you need). 2. Cut up some square sheets of aluminum foil (about 5.5″ square) 3. Place dry kiss in center and start wrapping the foil around the base. Insert message near top and secure it by pressing the foil together at top.

I'm sooo excited to make these for Steve for V-day!! Everything that I've made from Bakerella's website is always so good.

Food For Thought Thursday

Chocolate Peanut Butter Cereal Bars


5 cups Chocolate Cheerios® cereal
3/4 cup raisins (I don't add the raisins since I don't like them!!)
3/4 cup salted peanuts
1 cup corn syrup
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 cup creamy peanut butter
1/2 cup milk chocolate chips


Directions:


1. Spray 13x9-inch pan with cooking spray. In large bowl, combine cereal, raisins and peanuts; set aside.
2. In 2-quart saucepan, combine corn syrup and sugars. Heat to boiling over medium heat, stirring constantly; remove from heat. Stir in peanut butter.
3. Pour peanut butter mixture over cereal mixture; mix until thoroughly coated. Spread evenly in pan.
4. In small microwavable bowl, microwave chocolate chips on High 1 minute, stirring every 15 seconds, until melted and smooth. Drizzle over bars. Refrigerate 15 minutes or until chocolate is set.
